Oven Roasted Potatoes

These potatoes are roasted until crispy.

Ingredients

Directions

  1. Wash potatoes and cut into smaller than 1" cubes.
  2. Mix olive oil and spices.
  3. Spray baking dish with cooking spray like Pam.
  4. Place potatoes into baking dish and pour oil mixture over potatoes. Stir well.
  5. Bake at 400° F (200° C) for approximately 30 minutes or until potatoes are nicely brown.
  6. Note: for less cook time, pre-cook the potatoes in the microwave for 2 - 3 minutes before placing in the oven.
  7. Note: other variations include, sprinkle potatoes with any type of cheese before serving or add onions and/or red and green peppers for flavor.

These were so good and so easy to make. Will definitely add this to my staple of sides.

The potatoes weren't truly crunchy at the end of baking time. I needed to continue baking for another 15 minutes and turned the potatoes over so they browned evenly. Good flavor!
