One Minute Flax Meal Muffin

A filling and versatile low carb muffin, ideal as a breakfast accompaniment.

Ingredients

Directions

  1. Mix dry ingredients well.
  2. Stir in melted butter and beaten egg.
  3. Pour ingredients into a coffee mug.
  4. Microwave on high for 1 to 1 1/2 minutes.
  5. Muffin should pop out of coffee mug.
  6. Cut and eat with desired filling.

I thought they were awful! I ate a couple of bites and threw it away! I toasted it and put cream cheese on it and it tasted like cinnamon flavored cardboard. : (

wow we loved it !!!!!!!!!!!, i dont see how anyone couldnt !!! looking forward to making up ways to use this ..thanks.. i did too use 1/4 cup flax seed meal, and added 1 T butter too

1/2 tbsp butter? I think we use 1tsp butter...also can try to substitute butter with coconut oil for those that don't have dairy...

I put 1/4 c pumpkin in mine to get my veggies! Hubby(not on Atkins) is hooked too. I use a lot less splenda. Just a touch is enough.

Also noticed my recipe for MIM (muffin in a minute) states 1tsp butter, also 1/4 cup flax meal in the recipe that I use, but no salt.
I was so surprised just how good they were, i sliced it and put a thin layer of cake frosting and it tasted just like carrot cake. And Im getting my fiber

Love these. I leave out the Splenda, and eat them hot with butter. Very good.
