Oatmeal Banana Cookies

With very little oil, these cookies are moist, delicious and very filling.

  1. Mash bananas, add other ingredients, stir well. (Chopped nuts can be added if desired).
  2. Drop about 3 tablespoons of mixture on cookie sheet treated with a light spray of cooking spray like Pam or covered with parchment paper.
  3. Flatten with back of spoon to make patty approximately 1/2" thick.
  4. Bake at 350 °F (175 °C) for about 13-16 minutes, until cookies start to brown.
  5. Carefully remove from pan with spatula and let cool on paper towel.
  6. After cool, you can wrap in cling film and freeze.
