I like to use almond milk instead of chicken broth and serve with a dollop of low fat sour cream.

This looks absolutely scrummy but can someone help? What is chicken broth?...is that a soup? (1oz of chicken soup?) or would a chicken stock cube suffice? (made up with water, of course)...or is it something else? Thanks for any guidance.

Made this but used fat free cream cheese instead of the parmesean and it was very hard for me to tell the difference between this and mashed potatoes. Excellent substitution!

Yummy! Good source of healthy dairy (go easy on the cheese though) and a healthy vegetable all in one!

I thought it was ok, perhaps the garlic was too much for me. But my kids didn't care for it, so back to the drawing board.
