Low Carb Broccoli Cheese Soup
A great low carb broccoli cheese soup that will definitely become a favorite.
Ingredients
Directions
- Heat the chicken broth in a pot.
- In a separate bowl, mix cream cheese, 2 tablespoons of butter (optional), heavy cream and cheddar cheese. Place in microwave for 30 second intervals to soften. Stir after each 30 seconds.
- When broth is hot, stir in frozen broccoli and let soup heat up again.
- When soup is heated, pour the cream cheese mixture into the pot with the broccoli and chicken broth.
- Stir continuously to melt the cheeses into the broth.
- When soup is hot again, turn off the burner, and put half of the broccoli and 1/4 cup of broth into a blender and puree. (this will thicken the soup and make it creamy).
- Pour puree back into pot and stir well.
- Serve hot and garnish with cheese if you'd like.

I did not like the way the cheese did not melt. It was in clumps. The taste was good. I also added some ham.

Definitely needed garlic, salt and pepper. I melted all the cheese with butter in a double broiler and it turned out fantastic. TWO THUMBS UP!!

Delicious. I make it with fresh broccoli and it comes out wonderfully.

I loved this soup. I added some salt and lots of pepper. I think fresh broccoli would taste good too.

I love this recipe too. I added a little powdered mustard and Franks red hot and it was amazing!

This is easy, quick, and filling. It is also great because it freezes really well.

I tweeked this somewhat, I didnt have the canned broth on hand, used bullion cubes instead. I also used frozen broc/caulif mix. It was a bit on the thin side but had wonderful flavor!!
