I made these as a side to go with veggie burgers. They were great! My boyfriend usually doesn't like to try new things but even he LOVED them. My only problem was that they were soooo darn hard to cut. Did i do something wrong? should i have boiled them first to soften them?

It is not a favorite food but a good change from baked sweet potatoes. Being fries, they are a nutritious snackfood to go with movie time.
