Lean Turkey Chili

Ground turkey based chili loaded with vegetables and kick.

Ingredients

Directions

  1. Heat the olive oil on the stove top in a pan large enough for the meat.
  2. Add half the onion and all of the garlic to the hot oil. Let simmer for a few minutes until the onions become clear.
  3. Add the ground meat and cook until brown. Season with salt and pepper.
  4. Dice and slice tomatoes, potatoes, mushrooms and any other vegetables you may have lying around the fridge.
  5. In either a crock pot or large stove top pot add the tomato sauce, beans and vegetables (including the remaining onion). Add a jalapeno or haberno pepper for spice if preferred. Season with salt, pepper, oregano and red pepper flakes.
  6. Add all ingredients to the pot. Heat until it is boiling then reduce to low.
  7. Chili is done when the potatoes are cooked, usually 45-60 minutes stirring every 10 minutes. Enjoy!
  8. Note: can use lean ground beef instead and can be made in an all day crock or on the stove top.

Good idea regarding the pinto beans. I normally use kidney and black beans, but this is something to try. Not sure why you are adding potatoes here, and mushrooms...yuk!

This reciped made way to much to just be 4 servings, I'm thinking it's closer to 8. I substituted celery, shredded carrots, and bellpepper for the potatoes and mushrooms. I also used a package of chili seasoning and a can of petite diced tomatoes instead of fresh. I served it with corn casserole and my family loved it!

Very tasty and filling. Very high in fat and carbs. I used lean beef instead of turkey because the shop was out of ground turkey. I will cut the potatos out next time to reduce the carbs, as this soup is not suitable for Atkins diet with chunk of potatos in it.
