A healthy make-over salad with terrific authentic Japanese flavors.
Ingredients
Directions
- The cucumbers can be peeled, cut lengthwise, seeded, and sliced into thin half moons.
- In a large bowl, combine cucumbers and salt; mix well.
- Add sugar, soy sauce, rice wine vinegar, and sesame oil; mix well.
- Sprinkle with sesame seed and mix.
- Let marinate for 20 minutes before serving.
- To serve, divide salad among individual chilled plates.

Yum! Used reduced-sodium soy sauce to cut down the sodium a bit. Made a perfect side to seared tuna. I also toasted the sesame seeds first, to give them better flavor. Love how quick and easy this one is. I think I'll be making it often this summer!

I love this for summer, or to remind me of summer in the winter. I use the hot house cucumbers so it doesn't have to be peeled or seeded. I also cut the salt out completely; you really don't need it with the soy sauce.

I don't have blood pressure issues, so the sodium content is fine with me, but maybe try cutting it in half and see how it tastes. This recipe with shredded cabbage instead of cuccumber is also fntastic. I have put this recipe on a sticky note in my kitchen cupboard, I love it so much.
