Homemade Potato Chips

Homemade salted and fried potato chips make for a great snack.

Ingredients

Directions

  1. Wash then slice the potatoes very thinly. As you slice, drop them into deep, cold water. A mandolin does the best job of this and the slices should be only slightly thicker than regular potato chips.
  2. Bring a deep pan of frying oil to 375 °F (190 °C).
  3. Dry the potatoes thoroughly, then fry for a couple minutes until crisp and golden.
  4. Drain on paper towels and then season generously with salt.
  5. Note: you will need to use a fryer or a pan with enough oil to completely cover each potato slice.

You are not allowed any kind of potatoes on Atkins induction or OWL. Only in maintenance. It is NOT ATKINS FRIENDLY, sorry!!

I think this would be ok if it was using another starch that isn't so bad, like a sweet potato.

Seriously? this a website for people trying to lose weight. I don't think I need advise on how to fry a potato and I certainly don't see how that could help me in my weight lose endeavor. I see that one serving is 250 calories, but doesn't specify the size of the serving. 1st class. i am hungry and this does not help!
