Grilled Stuffed Zucchini

Great tasting cheesy zucchini boats.

Ingredients

Directions

  1. Cut zucchinis in half lengthwise; scoop out pulp, leaving a 1/4" shells.
  2. Brush with 2 teaspoons oil; set aside. Chop pulp.
  3. In a large skillet, sauté pulp and onion in remaining oil.
  4. Add garlic; cook 1 minute longer. Add bread crumbs; cook and stir for 2 minutes or until golden brown.
  5. Remove from the heat. Stir in the mozzarella cheese, mint and salt.
  6. Spoon into zucchini shells. Sprinkle with Parmesan cheese.
  7. Grill covered, over medium heat for 8-10 minutes or until zucchini is tender.
  8. Note: you can also make them in the oven.

I prepared almost exactly as directed, except that I didn't use mint, and I used 2% shredded mexican cheese instead, and added a few TBS of diced green chiles. I loved these (so did hubby and teenage son), and I will definitely make these again! Could mix up ingredients based on what you have on hand.

Used stuffing instead of bread crumbs and left out the mint. Very tasty!

I ate this with dinner one night and lunch the next day. My boyfriend was not a fan, but it left me with plenty of leftovers!

Great recipe, I used basil instead of mint more garlic, 1/2 teas Italian seasoning, pinch of red pepper flakes and "Panko" bread crumbs, used only 2 teas olive oil to sauté filling and sprayed the zucchini and top of filling with Pam olive oil spray. Baked at 350 till tender. Served as an appetizer with individual 1/4 cup servings of homemade pasta sauce for dipping. This recipe is a keeper.

This is very yummy and very filling. I have served this with grilled chicken breast for a complete meal.

This was so good! I didn't have any mint so I used fresh basil from the garden, and added extra garlic. I'm going to use this again and again and again. My non-dieting husband loved it, too.
