Grilled Bruschetta Chicken
Italian inspired chicken with mozzarella cheese, tomato and basil.
Ingredients
Directions
- Place a large sheet of heavy duty foil over half of grill grate. Pre-heat grill to medium heat.
- Pour 2 tablespoons of dressing over chicken in a resealable plastic bag. Seal bag and turn over several times to evenly coat chicken with the dressing. Refrigerate for 10 minutes to marinate.
- Remove chicken from marinade and discard bag and remaining marinade.
- Grill chicken on uncovered side of grill for 6 minutes.
- Meanwhile chop the tomato finely and combine tomatoes, cheese, basil and remaining 2 tablespoons of dressing.
- Turn chicken over and place cooked side up on foil on grill. Top evenly with tomato mixture. Close lid.
- Grill additional 8 minutes or until chicken is cooked through.

not sure about the dressing on this diet - but could substitue lemon juice & garlic.

I have Kraft calorie wise Sundried Tomato and Oregeno salad dressing. Gonna try it with that.

Very good recipe.It is from kraft canada.I have been making this recipe for a long time now...I changed it a bit I use store bought bruschetta instead of the tomato and basil. You can also make this inside when the weather is too cold. I fry it in a non stick pan(without oil) a few minutes each side then transfer it to a baking dish and add the bruschetta and cheese and finish it in the oven at 350...when you need a little bit of summer in the dead of winter....

Spazzy me forgot to pick up a tomato, so I had to use some spaghetti sauce that I had. The sauce was a little overpowering, so I probably should have marinated the chicken a little longer to try to overcome that. Overall, very yummy and I'll definitely try this one again!

Would make my own dressing - too many "franken-fats" in most commercial dressings. Other than that, looks great!
