Gouda Stuffed Chicken Wrapped in Bacon

This recipe can be a bit on the spicy side, but you can always use less spices for each serving.

Directions

  1. Pre-heat oven to 350° F (175° C).
  2. Flatten chicken breasts to 1/4 inch thickness. Combine pepper, garlic powder, paprika and the cayenne together in a small bowl and spread evenly on both sides of the chicken breasts. (This can be rather spicy, if in doubt, use about half of the spice mixture.) Salt to taste.
  3. Cut the gouda cheese into small peices and place 1 oz of cheese on each chicken breast. Press down firmly and roll the chicken from the narrow end. Wrap each roll in a slice of bacon and secure with a toothpick.
  4. Melt the butter in a skillet over medium heat. Brown chicken rolls evenly until the bacon starts to get crisp.
  5. Place the chicken rolls into a baking dish and bake at 350° F (175° C) for 20 minutes. Remove toothpicks prior to serving.

My family and I made this last Sunday. I was great. My 15yr old son raved about it. LOL he doesn't know this is part of my diet. Anyhow it went over really well and have had a request to make it again soon. I found it to be very tasty. Some have called it spicy, I am not sure that is a good adjective compared to flavorful.

THIS RECIPE IS FOR ATKINS!!! NOT FOR THE GI DIET! Ugh this irritates me sooo much! hahaha sounds absolutely WONDERFUL!!! Will try sometime this week.

lovely! If you don't mind your bacon a bit soggy, covering the baking dish with foilkeeps the chicken moist.

This is also great with chilled cream cheese in the middle of the chicken instead of gouda

This was sooooooooooo good! The only thing I changed was adding a teeny bit of butter in the baking dish before I baked it, and it wasnt dry at all that way! You should try this it is so good!!
