Delicious lower calorie Southern style fried potatoes with onions.

Directions
- Peel and cut potatoes and onions into small squares and put into a small non-stick skillet with a tablespoon of extra virgin olive oil.
- Sprinkle salt and pepper over contents and stir to coat.
- Cook over medium-high until skillet contents start to sizzle.
- Turn down to medium-low and cover.
- Cook covered over med-low heat for about 15 minutes or until potatoes are tender, stirring occasionally.
- Remove lid, turn up the heat to high and lightly brown them for about half a minute.
