Flax Cookies

Kids will not even think about chocolate chips after biting into these tasty yet nutritious cookies.

Ingredients

Directions

  1. In bowl, beat together butter and brown and granulated sugars until light; beat in egg and vanilla.
  2. In separate bowl, whisk together flour, oats, flaxseeds and baking soda; stir into butter mixture until soft dough forms.
  3. Drop by level tablespoonfuls (15 ml), 2" (5 cm) apart, on ungreased rimless baking sheets.
  4. Bake in top and bottom thirds of 350 °F (175 °C) oven, rotating and switching pans halfway through, until golden, 12 minutes. Let cool on pan on rack for 2 minutes.
  5. Transfer cookies to rack; let cool. (Make-ahead: Layer between waxed paper and freeze in airtight container for up to 1 month.)

This recipe is not Atkins friendly for Induction as it contains oats, flour and 2 kinds of sugar!

These cookies were good, although I did crush the flax seeds, and added a LITTLE bit of dark choc chips, and diced walnuts. They do get a bit hard, but fresh from the oven they are wonderful!

This recipe defeats the purpose of wanting to add flax to your diet. You have to crush or grind flax seeds, otherwise they will not be absorbed into your body-they will just pass through, which defeats the purpose of eating them.

Recipe as written is not good for Gastric Bypass people. Although you can exchange the granulated sugar with splenda, use the slpenda brown sugar mix, and that would make it quite a bit better.
