Flax Bread

This easy microwaved 'bread' turns out perfect every time.

Ingredients

Directions

  1. Ground 1 cup of flax seeds.
  2. In bowl #1: add ground flax, baking soda and baking powder. Mix well.
  3. In bowl #2: add eggs, water, oil, sweetener (lik Stevia or Splenda) and vanilla. Mix well.
  4. Add walnuts to dry ingredients.
  5. Grease a microwave casserole dish - 8" diameter.
  6. Mix both dry and wet ingredients together. Pour into greased microwave casserole dish.
  7. Microwave on high for 5 minutes.
  8. Turn upside down on to a baking rack. Cool. Turn over and serve slices. (Great with cream cheese & berries).

This was very good. I added some cinnamon, nutmeg and pumpkin spice. Next time I might do it with bananna extract. :)

This is pretty good. I also added some cinnamon, and perhaps next time I will add some cocoa powder. Or,go a savory route and add some garlic and dried herbs....instead. Has anyone tried this recipe using egg substitute?

Nice alternative to bread! Easy to make. Next time I might try topping with Strawberry Cream Cheese for an added touch. Thanks for the recipe!

LOVE this bread. Great with soups and stews, or for breakfast with some almond butter and sugar free preserves. I make it at least once per week.

Made this "bread" yesterday, only reduced the ground flaxseed by half and added ground sunflower seeds and ground almonds instead. And of course added cinammon which made a huge difference. Tasted fantastic.

This was even better this morning. I topped a slice with a bit of cream cheese mixed with a bit peanut butter and pancake syrup. Really good and it is so filling. I only needed the one slice.

It was so easy, I thought for sure I missed something. ok, by itself, spread a little bit of hummus on there and it was the bomb. Filling too. I added 1 tablespoon of cinnamon also. I am definitely making it again. Does it freeze well?

looks good if you're trying to cut carbs, etc. as it has about the same amount of protein and fat as wheat breads. however the amount of calories makes it really not that suitable for something like WW, which counts only calories/fat/fiber. you're better off sticking with a "light" bread that's high in fiber.
