Fettuccine with Light Alfredo Sauce

A lighter version of a favorite pasta dish.

Ingredients

Directions

  1. In saucepan melt the butter.
  2. Add minced garlic cloves; cook over low heat 1 minute.
  3. Whisk in 3 flour, then whisk in fat free half-and-half until well combined.
  4. Finally, whisk in salt, pepper and nutmeg, and bring to boil, whisking frequently.
  5. Reduce heat and simmer 5 minutes or until thick.
  6. Remove from heat and stir in grated parmesan cheese.
  7. Serve over cooked fettuccine.

Reviews 
To me, the sauce was similar in taste to to that of Lean Cuisine's Fettuccine Alfredo dish, so it was ok, but not great. I may use less flour and maybe more garlic next time to give it better flavor.
