Great way to avoid bread but still get the sweetness of french toast.

Directions
- Heat pan with favorite cooking spray until hot.
- Beat the eggs.
- Add the splenda and cinnamon, beat well.
- Pour into pan and heat on medium heat with a lid to create a fluffy top.

Good idea! This could even be a snack, and if you wanted to reduce fat, use Egg beaters for half or all of the eggs!

My family hated it and vehemently opposed eating it after taking one bite. I ate mine but it wasn't my favorite.

on phase 2 and 3 of South Beach you can have whole wheat bread... why not just make regular french toast with whole wheat bread, egg and a little skim milk and sweetener?

This is a great recipe, my kids really love them too..They put a little sugar free syrup on them..

I added a little imitation vanilla and a smidge of light vanilla soy milk to the mixture to make the eggs fluffier. I also added sugar free syrup. It's the best thing since sliced bread (which I didn't even miss). Nice change from plain eggs once in awhile.

I use 3 eggs, some fat-free half-and-half, cinnamon, splenda, and a dash of vanilla. It's really tasty.
