Diet Cola Chicken

Diet friendly barbeque style chicken breasts.

Ingredients

Directions

  1. Mix ketchup and diet cola (like diet Coke) in a medium bowl.
  2. Arrange 4 chicken breasts in a large skillet, pour ketchup and cola mixture over the top. Ensure that mixture covers chicken on all sides.
  3. Turn burner to medium heat and cook for 30 minutes, covered, stirring and scraping occasionally to prevent sticking.
  4. Remove lid and cook an additional 10-15 minutes until chicken is done and sauce sticks to chicken.

I haven't made this, but the concept looks promising. My problem with this recipe is all the carbs, which are coming from the ketchup; but if you were to make this using Heinz Carb 1 Ketchup, this would be a winner. I'll be adding this to my cookbook, with a note to myself to make it much more Atkins friendly.

Made this recipe with 1.5 lbs of chicken breast, 3/4 cup of ketchup and 12 oz diet Dr. Pepper. The end result was perfect for me because I knew I was going to shred the chicken and didn't want it too saucy. Served inside of a low-carb tortilla with 2 tbl 2% Fage greek yogurt, sliced scallions, and pickled jalepenos, very delicious!

I loved this, used diet Dr pepper instead of diet coke. Full of flavor.

I made this for dinner last night, and thought it needed just a bit of "something more" for flavor. The chicken was very tender and shredded nicely, and wasn't as dry as chicken breast can be. I added about 2 tbsp. of barbecue sauce toward the end of the cooking time and was satisfied with the richer flavor. It was easy.

How would adding regular soda to this change the point value? I would think that with a regular soda coming in at 4 points (PointsPlus) and then this being four servings it would add just one point correct? Just throwing that out there for anyone, such as myself, who avoids artificial sweetners such as aspertame. I will be trying this tonight!
