Curried Pumpkin Soup

Tasty and healthy pumpkin soup with a nice edge from the curry powder.

Ingredients

Directions

  1. Heat margarine in a pot and cook onions until glassy. Add curry paste and cook for 1 minute. Add pumpkin, stock and sugar.
  2. Reduce heat, cover and simmer for 15-20 minutes, until pumpkin is soft. Blend until smooth. Season with salt and pepper.
  3. Garnish with parsley and serve.
