Crockpot Chicken Vegetable and Brown Rice Soup
A veggie and chicken soup with brown rice to keep you warm when the cold keeps you in.
Ingredients
Directions
- Prepare a crockpot.
- Add all of the diced vegetables into the crockpot. Also add the diced cooked chicken breast.
- Add the water and chicken stock.
- Stir in the brown rice.
- Season with pepper and thyme.
- Cook until the rice is tender and done, about 6-8 hours.
- Note: this is a meal that can be started in the morning and eaten when you get home for dinner.

Seems like a great recipe but, shouldn't be under the detox phase since no meat is allowed yet...can't wait to try it once I get to phase II though! :)

I modified the recipe: used addl 1C of stock & water, added a sprig of rosemary and 2 leafs of sage and added some wild rice..but, I thought the broth was still a little bland. Maybe next time I'll add some oregano or basil, but there will be a next time--it was good!!
