A delicious, low fat, high fiber and hearty meal.
Ingredients
Directions
- Drain beans.
- Combine beans, onion, tomato sauce, diced tomatoes with chilies, and taco seasoning in a slow cooker.
- Place whole (thawed) chicken breasts on top and cover.
- Cook on low for 10 hours or on high for 6 hours.
- Half hour before serving, remove chicken breasts and shred. Return chicken to slow cooker and stir back in.
- Top with fresh cilantro, reduced fat cheese, and/or light or fat-free sour cream. Serve with cornbread, low-fat chips, or rice.
- Note: this makes a lot and it is even better the next day for lunch!

So delicious! At first I was skeptical of the taco seasoning, but the whole dish really impressed me. This will definitely become a regular dinner around my place.

I love this recipe and make it quite often. However, I've recently switched to ground turkey and it's just as good if not better! The long it sits, the better it is!

I left out the low fat sour cream and low fat cheese, this was delicous and nutricious, tons of fibre too! Thanks, Laura for submitting this healthy receipe!!

This was easy and makes a lot which is great for lunches the next day. I added a chopped green bell pepper and 1/4 tsp cayenne. Next time I'll double the cayenne for more kick and might consider adding some chopped celery for a little crunch. Also, the serving size we ate was more like 6-8 total servings.

Super easy to make and very yummy. The portion sizes are filling especially for how low calorie it is. My husband doesn't care for chili's usually so he put his in a tortilla with some cheese and he loved it.
