A delicious, low fat, high fiber and hearty meal.
Ingredients
Directions
- Drain beans.
- Combine beans, onion, tomato sauce, diced tomatoes with chilies, and taco seasoning in a slow cooker.
- Place whole (thawed) chicken breasts on top and cover.
- Cook on low for 10 hours or on high for 6 hours.
- Half hour before serving, remove chicken breasts and shred. Return chicken to slow cooker and stir back in.
- Top with fresh cilantro, reduced fat cheese, and/or light or fat-free sour cream. Serve with cornbread, low-fat chips, or rice.
- Note: this makes a lot and it is even better the next day for lunch!

This tasted great! I everything but the chicken in a pot, cooked the chicken separately, then added it to the chili and let simmer for a little while. It was super tasty--lots of spices. I will say that with my husband and me, the serving sizes were a bit larger than suggested making it more around 6-8 ww points for dinner. Still, a great healthy dinner!

This was very tasty - modified a little (for more spice). Add more jalapeno and red chili flakes

It was amazing! The way the chicken just fell apart when it was time to cut it up. Yum! I cooked it on the hob instead of a slow cooker, for about 4 hours, instead of the 6-10 and it still tasted amazing.

Fantastic. I cut the chicken down to 16oz (4 x 4oz breasts). Super hardy and full of awesome protein. Very tasty.
