A nice creamy vegetable puree soup.
Ingredients
Directions
- Sauté onion and garlic in a non-stick sauce pan until onion is translucent.
- Add remaining ingredients, except stock. Cover and simmer for 10 minutes.
- Add stock, bring to boil, cover and simmer for 20 minutes.
- Remove half the vegetables and puree in a blender.
- Put puree back in pan along with beans (if using) and heat through.
- Note: add a can of black beans or chick peas to finished soup to make it a great low fat dinner. Based on a Weight Watchers vegetable soup recipe.

I remember this recipe from a long time ago....delicious....I often use vegatables I already have in the frige. I also use canned diced tomatoes when fresh ones are to expensive...

It is really tasty!! However it is not really creamy...

I wouldn't call this creamy. I have tried other veg soup recipes on here that I personally prefer. It's ok though
