Creamy Pesto Philly Chicken
Low carb and easy chicken dish.
Ingredients
Directions
- Heat oil in large non-stick skillet on medium heat.
- Add chicken. Cook 6 to 8 minutes on each side or until done (170 °F (75 °C)). Transfer to plate; cover to keep warm.
- Add cream cheese spread to skillet. Cook on medium heat 5 minutes or until melted, stirring constantly.
- Whisk in broth and pesto (2 tablespoons). Cook and stir 2 to 3 minutes or until sauce is thickened and well blended. Pour over chicken.

I made this for dinner tonight and one of my gf said it looked gourmet. When I told her what was in it she was shocked because it looked so good. I made a cheesy cauliflower reciped to go with it. Yummy!

OMG...this was AWESOME!!!! I butterflied the chicken, pounded them a bit, and stuffed with a mixture of fresh baby spinach,garlic and a tad of pesto. Heavenly!! Hubby loved it too!

Awesome I made some baby carrots and substituted half the Philly with some goat cheese. will definitely make this again.
