Creamy Mushroom Soup

For those on a low carb diet who miss their creamy mushroom soups, look no further.

Ingredients

Directions

  1. Melt butter over medium heat, using a large pot.
  2. Add onions and sauté for 5 minutes.
  3. Add mushrooms and sauté for 5 more minutes.
  4. Stir in the chicken broth, paprika, soy sauce and dill weed. Reduce to low, cover and simmer 15 minutes.
  5. Pour heavy cream into soup and blend well. Simmer, covered, for 10 more minutes.
  6. Stir in salt, pepper, lemon juice and sour cream.
  7. Heat through for 4 or 5 minutes
  8. Serve hot and enjoy!

I was interested in your statement that the cab counter must be incorrect, so I entered the ingredients into SparkPeople's recipe calculator and got the following results: Calories - 320.2 Fat - 27.7 g Carbohydrates - 14.7 g Proteins - 6.0 g They surely do not match, but I did have to slightly alter my input. On SparkPeople, mushrooms are given in cups instead of pounds, so to get pounds, I had to choose an entry added by a user and not as part of the USDA guide's analysis. Everything else was exactly as you gave it in your recipe. Odd.

great for induction phase. are there actually more than 4 servings? it was counting my sausage and mushrooms recipe as 10 carbs per serving and that simply can't be true.

This carb counter is screwy. It really only has 5-6 net carbs per serving.
