Cream Cheese and Bacon Jalepeno Poppers

An even tempered low carb snack that's low in calories too.

  1. Cut the chili peppers in half lengthwise; scrape out seeds and membranes.
  2. Fill each half with cream cheese, but do not mound it. Four ounces should be just about the right amount for 8 average size jalapeno halves. If you have extra large peppers, make sure you have a full 8 ounces of cream cheese on hand.
  3. Wrap each with 1/2 slice raw bacon, making sure to start with the end on the bottom of the pepper. Stretch the bacon slightly to make it go all the way around each pepper once, then tuck ends underneath.
  4. Place cream cheese side up on foil-lined baking sheet. These can be assembled and chilled until just before baking and serving.
  5. Bake at 375° F (190° C) for 20-25 minutes.
  6. If bacon isn't quite done, broil a few more minutes to brown.

I looooved this recipe! Turkey bacon is a good substitute for regular bacon and you can't tell a difference in flavor from the fat-free cream cheese! Awesome appetizer recipe!

Pretty good. We subbed in low fat cream cheese and turkey bacon and it was pretty darn tasty.

These are pretty tasty, but took longer to cook than the recipe calls for. However, I will be making these again, with lobster meat mixed in to the cream cheese. It should taste similar to the lobster poppers I used to get at the Red Lobster restaurant. And yes, I do think this recipe is good for Atkins, Induction Phase; if it wasn't I wouldn't have made it in the first place.

Hubby and I do these on the grill every summer. I use a toothpick to hold the bacon on the jalepeno. One piece of bacon will wrap about 3 peppers. I use low fat cream cheese and add a few herbs to the mix before I stuff the peppers. Be sure you know how hot your peppers are before you stuff too many. We've had a drought this year and could barely manage to eat the batch we made this summer because the heat was so intense from them... and we like hot! Even w/no seeds my Hubby was almost brought to tears.

This is a great recipe! If you switch out the cream cheese for fat free cream cheese then the poppers come in at only 40 calories a piece. I will be making this one again.

So good and very easy to make. I used real bacon bits instead of wrapping the bacon which NEVER get crispy enough for me.
