Chipotle Black Beans

A great support act for a Mexican feast.

Ingredients

Directions

  1. Melt 1 tablespoon butter and sauté onion and garlic in butter until tender.
  2. Add beans, peppers, water and crushed pepper, salt and pepper and a teaspoon or two of the adobo sauce if you like.
  3. Bring to boil, reduce heat and simmer 15 minutes.
  4. Serve beans topped with a dollop of sour cream and sprinkling of sliced green onion.

Very good, except I used canned chipotle peppers (a few too many) and it was very spicey but delicious.
