Perfect fall soup. Easy to make, very tasty and low in points.
Ingredients
Directions
- Heat oil in a Dutch oven over medium-high heat.
- Add onion and garlic; sauté for 2 minutes.
- Stir in shredded chicken and all ingredients (except tortilla chips and sour cream); bring to a boil.
- Reduce heat, and simmer 1 hour.
- Ladle soup into bowls; top with tortilla chips and sour cream.
- Note: I often leave off the chips and sour cream and add chopped up avocado.

i made a mistake on the order of the ingredient list. The sour cream and Tortilla chips are not added in untill the very end.

I loved this soup! I left out the corn because it's a little high on the GI index. I actually think that I would like it better w/o the chicken.

I make a VERY similar soup but I leave out the corn and use Hominy and black beans instead. Might be better for someone looking at the GI index since Hominy is a 57 where as corn is 78.

This was DELISH! A family favorite, and we will definately make it again! One thing we did add was a package of taco seasoning...otherwise it seemed a little blah. I think this would also be good with ground turkey. Enjoy!!!

I added chili seasoning to mine, and it is yummy! My husband loved it! I'll add black beans and hominy next time to try it a different way! Great on a cold day!
