Chicken Tortilla Casserole

My kids love this wonderful dish.



  1. Cook chicken breast and shred after cool to touch.
  2. Slice tortillas into strips.
  3. Mix chicken breast, black beans, soup, salsa and chilis.
  4. Place 1/2 of tortillas in a casserole dish that has been sprayed with cooking spray like Pam.
  5. Layer next with chicken breast mixture and then 1/2 of the shredded cheese.
  6. Cover with other half of tortillas, then chicken breast mixture and then cheese.
  7. Cover and bake in 350 °F (175 °C) oven for 45 minutes.

A little more calories than what I's like in one serving

You can make this have less calories by using fat free cheese and cream of chicken soup. It can have whole wheat tortillas. I wanted to see the calorie count the way I made it that day and I have to admit, there are a lot. You could also have a smaller serving size.

This would be good for my 3 day cheat, but can't have it during the 11 day menu
Sounded delicious until I looked at the Nutritional Facts. I would not be able to eat this.
