Chicken Taco Casserole

A lazy version of a taco that is quick and easy to make.



  1. Cook ground chicken in deep frying pan until golden brown. Add chili powder.
  2. Add salsa, green peppers, jalapenos, and black beans to chicken in frying pan. Simmer for about 5 minutes or until heated thoroughly.
  3. Place half the chicken mixture into a 8x8" baking dish (preferably round). Layer 1/2 cup of cheese on top, one tortilla shell, another tortilla shell, remaining chicken mixture, 1/2 cup of cheese, sour cream, 1 cup of cheese.
  4. Place in oven at 350 °F (175 °C) until cheese has melted (about 20 minutes).
  5. Add chopped tomatoes and lettuce. Serve!

This recipe sounds wonderful but I think the carbs are a little high for phase 1. More like phase 2 or 3. I would try using the low carb/high fiber tortilla shells. They taste just as good. I can't wait to make this for dinner!

Everything about this screams bad for you. Calories are high for only one serving, fat grams are WAY too high and the sodium is out of control. I think I will pass.

This casserole was delicious and spicy! We cut the cheese in half and used whole wheat torillas. We also used fat free Greek yogurt instead of sour cream and still tasted delicious.
