Chicken Marsala

A really healthy creamy chicken marsala.

Ingredients

Directions

  1. Cut the chicken into 2 1/2 to 3" pieces (almost like half a chicken tender).
  2. Put olive oil into a large skillet pan and heat up to medium-high.
  3. Add chicken pieces to the hot pan and sprinkle with ground oregano (flakes will work but the taste is a bit better with ground), sea salt and pepper. Cover and let sauté for about 3 minutes.
  4. Turn the chicken pieces over, add the mushrooms and onions tucked all around the chicken pieces. Sprinkle whole dish with remaining oregano, sea salt and pepper. Cover and let sauté for another 4 minutes or so.
  5. Stir until all onions, mushrooms and chicken appear to be tender, usually about a total of 7-8 minutes.
  6. Turn down to about medium heat and add the marsala wine, give it a rapid simmer for another 5 minutes. Add 1 tablespoon of low fat sour cream, stir in, cover and take the dish off the burner to allow to cool some.

This was really delicious and even my children liked it. However, I think I used a little too much oregano. I only had the flakes not ground. Next time I will definitely use less.

WOW!!! AWESOME!!! My wife and I are just getting started with fatsecret. I made this for us tonight and she said "this is a keeper". I made this with a salad and brown rice. Plenty of food and we came in at less than 300 calories.

This WAS delicious! I did use fat free sour cream and the chicken was approximately 1 lb. Very nice dish. I served over orzo with a veg. Didn't quite understand the cooking instructions (mushrooms & onions tucked around the chicken?) I just added them, cooked and continued on until all was nicely done. YUM, thanks ImLuuvd

So good!! My husband said this is definitely a repeat dish..and he hasn't said that about many SB recipes I have tried. Very very good!!

I'll add a few Mediterranean dishes over the weekend, look for my version of chicken cordon bleu, should be approved soon, it's even tastier and lower in cals than others I tried.
