Cheesy Salsa Chicken

Cheesy chicken with salsa that's sure to please.

Ingredients

Directions

  1. Put 4 boneless, skinless chicken breasts into an 8x8" pan sprayed with olive oil.
  2. Pour one small jar of chunky salsa (like Pace brand or any no sugar added thick salsa) over the chicken.
  3. Bake in 350 °F (175 °C) oven for about 25 minutes, checking occasionally.
  4. Remove the chicken dish and put the sharp cheddar cheese (or whatever cheese variety you like) and some chopped green onions on top and return to oven until cheese is melted and bubbly.
  5. Top with a dollop of low-fat sour cream when serving, if desired.

I took somebody elses advice and added some cajun spice to the chicken (I make my own mix based on Emerill's Essence). We had our chicken over romaine lettuce, and the differneces in textures, the crunch of the lettuce with the chicken was really good! The whole family liked it, so this one is a keeper... :-D

Used mozzarella cheese and this was yummy!!! Reminded me of fajitas without the tortilla.

This happens to be one of my families favorites and there are never any left overs. I even gave the recipe to my sister and they eat it often as well. Her husband thinks its so yummy as well as mine.

I just omitted the sour cream for myself but my husband loved it! I also sprinkled the chicken with some taco seasoning on the chicken before putting the salsa on it. It was a great addition to the taste.....

I made this to take to a party on Superbowl Sunday (to try to eat healthy). It was delicious (without the sour cream). I cooked the chicken about 5 or 10 minutes longer because it was still pink inside, but it was still super moist. Bonus, my (extremely picky) boyfriend ate the leftovers the next day and said it tasted amazing.

I didn't use sour cream with mine, but it was still pretty good. I used a Mango salsa which is a little sweeter, so might be better as a Phase 3 in South Beach.

This was a great dish. We skipped the sour cream by accident and still thought it was really good. It counts as a protein, a dairy, and a condiment. I added some whole grain rice and a nice salad for a starch and two veggies. It was very good and very filling.
