With these "fake" cheesy potatoes you can cheat without cheating.
Ingredients
Directions
- Boil the cauliflower until tender but not mushy. Drain.
- Add sour cream, half the cheese , cream of chicken and pepper.
- Mix ingredients well but without mashing the cauliflower. You want some chunks.
- Spray a casserole dish and pour mixture in.
- Pour remaining cheese on top.
- Cover with foil and bake at 350 °F (175 °C) for 20 minutes.
- Remove foil and broil for an additional 20 minutes or until cheese is melted and lightly browned.

This was so yummy!!! Even my boyfriend loved it and has asked for it to be made again! I cut back on the cream of chicken and stuck with the rest and it turned out great!

Very good recipe. I made it for friends one night...they couldn't stop eating it. They asked for the recipe and now make it atleast once a week.

Great tasty meal! Don't feel guilty eating lots of this. Didn't have some ingredients (cream of chicken, cheddar cheese, or sour cream). Replaced w/ Cream of Mushroom, Chicken broth, Parmesean Cheese & half & half). It was great! Thanks for the recipe.

I love it I also tried it with reduced fat cream of mushroom soup in place of the cream of chicken soup, then replaced the culiflower with brocoli. It was wonderful also.

Oh Yum! When I first read this recipe I assumed that it would be high in carbs because of the Chicken Soup, surprise it's not. I made the recipe two ways one without the soup (still good) and one with fresh cauliflower and I roasted it first. Incredible!

Oh, I miss potato type meals and love when I can use cauliflower in different ways! I will try this soon; with substitutions with soup and sour cream.
