With these "fake" cheesy potatoes you can cheat without cheating.
Ingredients
Directions
- Boil the cauliflower until tender but not mushy. Drain.
- Add sour cream, half the cheese , cream of chicken and pepper.
- Mix ingredients well but without mashing the cauliflower. You want some chunks.
- Spray a casserole dish and pour mixture in.
- Pour remaining cheese on top.
- Cover with foil and bake at 350 °F (175 °C) for 20 minutes.
- Remove foil and broil for an additional 20 minutes or until cheese is melted and lightly browned.

OH YUM! Thanks so much! I've seen how cauliflower can sub for potatoes and in my new recipe the mock potato soup..aww man it tastes just like baked potato soup..I LOVE IT and so does my family!! I can't wait to make this! I know I'll love it...thanks girl!

Watch out, the cream of chicken soup sometimes has flour in it. Read the ingredients. During induction, this can severely affect your weight loss. Just use 1 cup of cream and a chicken bouillon cube instead.

The instructions say 1 Tbsp, in fact, I used 1 tsp and it's still a litle much. I used a big head of FRESH caulifower cutting of the bulky stems. I really like it. It's better the next day! (Crude, for got to use cream and bouillon cube instead. This could effect my numbers!!)

Very good. I used to make a brocolli casserole just like this but added 1 egg and instead of 16 oz. of sour cream, i used a cup of sr. cream and a cup of mayo. And of course topped with cracker crumbs which could be replaced with cheese.

This was amazing. I skipped on the cream of chicken soup. I just didn't have any. But the dish actually made dinner with my husband (picky eater, also on SBD) manageable! Thanks so much!
