Caramelized Brussels Sprouts

Brussel sprout haters will be sure to change their mind after enjoying this fantastic dish.

Directions

  1. Cut off the brown ends of the brussels sprouts and pull off any yellow outer leaves. Cut them in half. Slice a medium onion in to long strips.
  2. Coat the bottom of your skillet with olive oil and set on medium-high heat.
  3. Add onions and brussels sprouts and stir. Make sure to coat as much of the vegetables as possible. Season with salt and pepper to taste. Garlic is great in this as well.
  4. Constantly stir sprouts and onions to avoid burning.
  5. Brussels sprouts will wilt and leaves will turn black and brown this is a good thing.
  6. Continue to cook and stir veggies until onions are clear and sprouts are soft.
  7. Serve hot. No butter needed!

We luv, luv, luv us some sprouts!!! I make a very similar version of this recipe. We fry them in a bit of butter mixed with the oil and skip the onion. Keep the sprouts cut side down and cover with a pan lid to steam. You want the cut side nice and browned. When serving add some cracked black pepper and grated parmesan cheese. These are GREAT!

I think this is about 6 servings based on the 3 cups of brussels at 1/2 cup serving each. I like to add a slice of bacon as well, adds to flavor and crunch and roasts better at about 400* in the oven. They are very yummy!

Thank you for submitting this. Excellent!!! My entire family enjoyed these...even my picky kids LOL Also I switched the olive oil for Pam and used frozen brussel spouts.

I made this but used frozen brussels sprouts. Just defrosted and cut then cooked. However I didn't have an onion on hand, I used a couple of cocktail onions quartered. The onions where kinda nasty but the sprouts came out fabulous!

Love this, however I use non-stick cooking spray and bake or put into fryer depending on my time in the kitchen. It saves a couple of calories therefore I get to eat more of the sprouts. The other cool thing you can do is season it anyway you want. Garlicsalt, onion, seasonall, bbq rubs, worchestier, soysauce. ENDLESS possibilities

Chose very small sprouts and were still a little bitter but overall GREAT dish! Mixed with 1 serving whole wheat pasta and a great filling dinner.

I roasted the brussel sprouts and onions in the oven instead of a frying pan and it was excellent. Nice and crisp and not at all bitter.
