California Zesty Stuffed Portabella Mushrooms
Baked portabella mushrooms with a zesty twist.
Ingredients
Directions
- Remove stems and gills from mushrooms and lightly brush mushroom caps with a little Italian dressing. Place caps on foil-lined baking pan and set aside.
- Heat remaining dressing in saucepan over medium heat and saute mushroom stems, garlic and red peppers.
- Add spinach to saucepan. Simmer until spinach is wilted. Toss in chicken.
- Flavor to taste with salt and black pepper.
- Spoon mixture into mushroom caps and top with tomatoes. Add mozzarella cheese over the tomatoes.
- Sprinkle parmesan cheese.
- Bake at 375 °F (190 °C) for 18 to 20 minutes until mushroom is tender and cheese is melted.

Enjoyed this thoroughly. Needed 12 oz spinach for 2 mushrooms. Skipped peppers and chicken, added diced cooked potatoes for vegetarian meal.

Will definitely be making these again. Skipped the chicken and used a little shredded mozzarella instead of grated.

Amazing, i am a fan of mushrooms and cheese .. so loved it - felt guilty while eating it but nevertheless enjoyed it yum.

Considering I grew up eating the fatty stuffed mushrooms with crab and cream cheese/swiss cheese - these were quite good! I had this with a grilled chicken breast and was very satisfied! My boyfriend thought it could use more cheese... told him next time I'll mix in cream cheese with his filling and add more motzza on top.
