Cajun Style Beans & Sausage

A wonderfully, delicious Cajun-style sensation of beans and sausages.

Ingredients

Directions

  1. Beans should be soaked and rinsed (ready to cook).
  2. Dice onions and green peppers. Sausage should be sliced and quartered into small pieces (about 1/2 - 1").
  3. In a large pot heat the olive oil over medium heat.
  4. Add sausages and cook for 3 minutes.
  5. Add onions, green peppers, and remaining ingredients and cook for an additional 5 minutes.
  6. Add crushed red pepper or more salt to taste.
  7. Add beans to pot and fill with just enough water to cover everything and bring to a boil.
  8. Simmer, cover, and cook for 3 hours or until beans are soft. Enjoy!
