Easy cabbage soup recipe that will delight you and your diet.
Ingredients
Directions
- In a large stock pot add the extra virgin olive oil on medium heat.
- Add onions, garlic and peppers, heat until onions are clearish.
- Add celery and mushrooms.
- Add carrots, soup mix (like lipton's brand), chicken stock and spices.
- Bring to a boil, turn down to simmer.
- Add cabbage pushing it down into the liquid, then add filtered water until cabbage is covered.
- Cook for one hour and let cool down before serving.

This soup is a safe filler. Just watch out for the sodium in the soup mix or chicken broth....

This soup is really tasty, and obviously low calorie. I think I'd like to modify it by adding something with more protein since I'm trying to lose weight and put on muscle. Chicken, or even tofu, could go a long way towards helping that.

the flavor was great! I have had similar but the onion soup mix really adds something.

Sounds very tasty! GReat for the low calorie part, but high in sodium with one serving being 20% of a day's sodium. Might be able to modify the recipe with substituting sodium free spices for the "onion soup mix" and using home made chicken stock, rather than canned, which is high in sodium. I think I'll give it a try.

pmmcjom12- a serving is one cup. I figured that out when I put the whole pot into measured bowls.
This recipe is very tasty and easy to put together. The only thing I changed is that I used two cups of mushrooms instead of 4 cups. I'm not really a fan of mushrooms and found myself still eating around them. Next time I'll probably chop them up very fine to encourage myself to eat them.
