Black Beans & Corn Salsa Salad

Different take on a taco salad with lean beef, black beans, cheese and salsa.

Directions

  1. Brown and drain the ground beef; return to pan and add 1 jar, approximately 2 cups of salsa.
  2. Add to pan black beans and corn and let simmer for about ten minutes.
  3. Serve on a bed of lettuce topped with shredded cheese and ranch dressing.

Corn Is totally not okay for South Beach Phase 1. Read the literature. The recipe sounds delicious but it won't work for South Beach

I substituted chicken for the beef and it came out fine. Have some black bean soup on the side. Easy on the pepper, though. I'm still sweating.

I made it for lunch without the meat and it was very good. Then made it for dinner w/lean ground beef that I cooked in taco seasoning to give it a kick. I also added fresh cilantro and jalapenos to the final dish. Yum! Easy and low cal.
