Quick and easy salmon with lots of flavor.
Ingredients
Directions
- Combine olive oil, fresh garlic, lemon juice, balsamic vinegar, and salt in a small bowl.
- Coat salmon fillet on both sides with mixture.
- Broil salmon in oven 4" from broiler for 4-6 minutes or until the fish flakes. If the fish is over 1" thick, you may have to turn once halfway through the broiling.
- Serve with extra balsamic vinegar to taste.

Easy and full of flavor. Even the hubby (who is not a fan of cooked fish) inhaled it, and a few bites of mine when I was not quick enough. My only critique is that the instruction to cook 4 inches from the broiler (without a temp specified) was a bit close for my broiler and the balsamic vinegar/olive oil splatterd and burned a bit. I probably had the broiler too hot.

Easy and good. Served with pasta tossed with pesto, tomatoes, red bell pepper and fresh Italian parsley. Will add spinach next time.

LOVE IT! very easy and full of flavor. Salmon did not get too dry. I did not broil mine, but rather cooked it on the grill. Will make again!
