Baked Salmon with Tomatoes, Spinach and Mushrooms

Salmon fillets with complementary vegetables and a simple, tasty dressing.

Ingredients

Directions

  1. Heat oven to 375° F (190° C). Place salmon fillets, skin side down, in 13x9-inch baking dish sprayed with cooking spray.
  2. Mix remaining ingredients until blended; spoon over salmon.
  3. Bake 20 to 25 minutes, or until fish flakes easily with fork.
  4. Note: based on a recipe from Kraft.

Planning on making this tomorrow night -- do you use raw spinach or cooked spinach in the preparation? I am trying to visualize mixing the dressing, tomatoes and mushrooms with 4 cups of raw spinach and getting it to fit in the pan over the salmon. Timely response appreciated please as it's being made tomorrow (March 4th) night!
