Bacon and Cheese Stuffed Mushrooms

These delicious stuffed mushrooms are also great refrigerated or reheated.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Take the stems out of mushrooms, reserving 4 of the stems. Clean mushrooms, set aside.
  3. Chop onion and reserved stems.
  4. Fry bacon until crisp, reserving grease.
  5. Cook onion and stems in grease until tender.
  6. Crumble bacon into soft cream cheese.
  7. Scoop some of mixture into each mushroom cap.
  8. Bake for about 10-15 minutes on baking sheet, and then broil to brown the tops.

These came out amazing for tonights championship football game! I substituted sundried tomatoes for the bacon since i'm a vegetarian :). I also chopped up a few black olives and some parmesan cheese. Topped off with some panko bread crumb. I only used 1/4 of the onion called for. It was perfect!

This sounds delicious, and I'm going to try it, but I think I'll change the bacon in for either turkey bacon or "canadian" bacon, and substitute for low fat cream cheese... 83% of the calories in this snack as prepared come from fat! I would eat it very sparingly.

i would change to turkey bacon and lowfat cream cheese and add some lowfat mozzella

I varied the recipe just a bit (o.k. maybe a lot!) :) It was quicker, easier and extremely tasty. I used 6 slices of canadian bacon (cut into small squares), 1 bunch of green onions and about 5 ounces of fat free cream cheese (mix together). No frying bacon or cooking anything in bacon grease (seemed waaay too fattening!) Mix, stuff, bake, eat. Quick, easy & yummy!

I know these are good with sausage instead of bacon. They don't take much time. Very atkins friendly.

These were a huge hit at my football party. but I did 1/4 of an onion and did half cream cheese and half 2% cheddar. Very Good!!
