Baby Red Potato Salad

Delicious non-traditional potato salad.

Ingredients

Directions

  1. Boil potatoes in salted water until soft, approx 10 minutes. Drain and let cool.
  2. While the potatoes are boiling, combine red onion, green pepper, mustard, olive oil, vinegar and mayonnaise and season with salt and pepper.
  3. Mix well and let the flavors marinade while the potatoes cook.
  4. Once the potatoes are done and cool, mix into the bowl and add scallions and additional salt and pepper to taste.
  5. Serve room temperature or refrigerate until ready to serve.

I served this dish when we had family and friends over for dinner. I replaced the red onion and green pepper with chopped green onions. Everyone loved it! A few people even asked for the recipe.

I made this a week ago to serve at a baby shower luncheon. I served grilled chicken breasts (marinated in lite Italian Salad Dressing, and brown 'n serve rolls for those not counting points. The next day I used leftover salad to make potato patties grilled with cookingspray in a non-stick pan.
