7 Layer Chip Dip
My mom's awesome famous 7 layer chip dip that is simple yet sure to wow your guests who will flock to your event when they hear this dip will be there.
2 cups vegetarian refried beans
12 oz light sour cream
4 oz light mayonnaise
3 tbsp taco seasoning
1/2 fl oz lime juice
1/4 tsp garlic salt
3/4 cup shredded Mexican blend cheese
1/2 cup chopped or sliced red tomatoes
3/4 cup diced tomatoes
1/2 cup sliced black olives
2 stalks green onion
Combine sour cream, mayonnaise and taco seasoning in small bowl.
In another small bowl remove flesh from avocados and mash, then add lime juice and garlic salt.
In a 13 x 9" serving pan or two 8" round pans evenly spread refried beans, I use the back of a large spoon.
Spread avocado mixture on top of refried beans layer.
Spread seasoning mixture on top of avocado layer.
Sprinkle shredded cheese to cover top of seasoning layer, top with diced tomatoes, sliced olives and sliced green onions.
Serve with tortilla chips, use lime flavored tortilla chips for an even bigger hit!
