This reply is to emmy1235, joinoz, Jean Mc, and lanaday: Thank you all for responses, ideas, and suggestions. Been very busy, of course, with spring springing! Leg cramps diminishing, but have also been outside 3-5 hours/day now, so lots of natural Vit.D.

I have noticed, that while I am trying to cook healthier, and usually am able to do that- including many soups, or stir-fry's that are veggie loaded, my hubby if falling back into a bad pattern. Actually, probably worse than when we started this. He is now 'scale' or weight oriented, not 'health' oriented. He is going all day, many times, not eating anything. I have explained repeatedly that he is heading in the wrong direction, and last night- just mentioned that he is lying to himself. If someone is trying to lose WEIGHT, the way to do it is for sure not to quit eating! I've tried to mention that weight loss isn't what he is after, as much as improved HEALTH. This morning, I asked him if he ate any breakfast today- as he was just getting ready to leave for work- and so he grumpily got up and had a bowl of oatmeal with raisins and some walnuts- and spent the time with the following statement... " If I eat crap with no flavor, that tastes terrible and I have to gag down- I guess I'll get healthy. If I eat anything tasty- I'll get sick." Within myself- I reacted. I stayed cool, though. I made a GREAT tasting stir-fry last night, for dinner, that was healthy, that he loved, (other than the comment about RICE), but, I limited him to one large plateful. I told him he cannot go all day without eating, and come home crawling- due to sugar lows, out of energy, start eating everything in sight- and be healthy- that he is deceiving himself.

I also mentioned that it takes at least 3 months of trying to change a habit, to actually change that habit, or to begin to get a good grip on it. He is going back to all that made him sick in the first place. Has anyone gone through similar 'withdrawls', and/or how to deal with this... Now, he literally doesn't want anything to eat- hardly-, because if he can't have a 1/2# of bacon, or sausage, with hash browns and eggs and toast- it isn't 'breakfast'. He thinks he is well, because he is feeling better than he has in years.

joinoz: Thanks for suggestions, reply. Not daunted by the cost- except for Avocados price right now. I think the cost is low- we are less hungry if eating better, and if eating poorly, one eats tons more... tons more crap, but tons more. More: we aren't hungry.

Emmy, thank you: I have. I am not eliminating all fats. I know better. It is extremely unhealthy. I am changing some of our fats out for better quality, and still including some of the rest, just a bit. Thank you for reply and interest!

Ok, thanks, mummydee and Jadsl. I will try the magnesium only, and yes, Jadsl, we take a multivitamin. I take men's over 50, as it has less iron than women's over 50 multi. I have just added B12 and B complex. Am going to pick up Niacin today,too.

My hubby and myself are trying to change what goes into our mouth, is the goal! We have had way too much processed foods, although we eat no fast food and no sodas. We are lacking nutrients! Because of too much macaroni and few veggies or fruits, we have various health issues that seem nutrient related, and we are working on a 180* turnabout in our cooking and view of food.

First time, ever, that I have actually read a recipe to see how much fat, saturated or monounsaturated, or how much potassium, or vitamins, or calories, or carbs, and it is still a challenge. I am handpicking my way through all of your posted recipes, which I am grateful to see!! They all have a ... uh... oh yeah..nutrition facts listed!! Wonderful!

My hubby was quite ill for a month, and we are attempting to remove most fats from his diet, and add easily digested nutrients to both of us. I have leg cramps, and they have begun to happen now in the daytime, as well as all night. I think we are starving- for nutrients.Very Happy
