Sugar addiction?
I had the same problem as you. I was addicted to not only sugar (in the form of hfcs), but to caffeine as well. I gave both up cold turkey and drink nothing but water now. The only thing sweet I have is fruit. Ripe strawberries, ripe watermelon, ripe sweet cherries, and apples are a few that I ate in my transition and helped a lot. Now, I can taste the sugar in fruit instead of being desensitized to it.

I looked at your diet calender. If that's accurate, then you're not eating enough! To find your cals/day, calculate: BMR/2+200. Never go below half of your bmr and never go above half+200. Also, walking won't build muscle, so muscle gain isn't your problem and it's also hard to build even a pound of muscle in a week.

Vegas=buffets :( Not sure what to do
I'm not on atkins, but my advice is to take your time, so eat slowly and stop when you're full. I've gone to buffets before and I stayed on track. Just don't lose sight of you're goal and know that when you stop, you won't be over full. It takes 20 min to know when you're full, by the way.

A great piece of advice I was given is to calculate your BMR then consume half of your bmr plus 100-200 every day. That way, you'll be satiated between meals and you won't feel like you're starving yourself. Also give a range of cals such as between 1200 and 1400 for morale, but never go below half your bmr.

Starvation Mode
I actually was looking this up a few days ago and most of the info I said was along these lines:
First, starvation mode takes several days in a row to go into effect. If you are hungry consistently for a few days in a row, then all of a sudden aren't hungry any more, then you're there.
Second, if you eat over 50% of your bmr then you will never have any effects. If you eat lower than 50% of your bmr consistently for several days, then your body will adjust and start burning less cals, something like 10-20% less, which can be overcome by building lean muscle which increases your BMR.
