Actually, my husband had a heart attack followed by balloon angioplasty, then several years later an angina attack that resulted in two stents being placed in his heart. His cardiologist who treated his heart issues, and the cardiologist who runs the weight loss clinic where his cardiologist sent him both tell him not to worry about the amount of fat, cholesterol, calories, sodium, or other items. All he is to focus on is getting his carbohydrates (sugars) below 50 per day (20 for weight loss) and keeping his proteins above 75 per day. Following this for a year now, he has lost 80 lbs., been able to get entirely off insulin shots (taking pills only for diabetes), cut his blood pressure medicine in half, quit taking his acid reflux medicine, has drastically reduced his issues with flatulence, and his cholesterol numbers are so low, our family doctor thought the lab had made a mistake and asked the lab to rerun the test. He eats a pound of bacon every three days, a dozen eggs every four days, and snacks almost entirely on pork rinds, which both cardiologists and our general practitioner all three tell us are the best snack you can eat due to the fact they have no carbohydrates. I know we've all been told for years that fat is the culprit, but that seems not to be so based upon my husband's results. No Industry Funded Study here, just a personal experience.

BYW, he only attended the weight loss clinic for four weeks and then decided he could do what they recommended on his own without purchasing the foods they sold. For the past 11 months, he has just watched the carb levels and protein levels in what he eats and has still had great results.

Good Beans
That sounds good.

I pour all the liquid off of a can of green beans, wash them well under running water and let drain for a minute or two (to get rid of salt used in canning). Then I put the beans in a baking dish, add about 2 tbsp of olive oil and 1/2 tsp sea salt and 1/2 tsp garlic powder. I mix them up to coat the beans and roast in at 350 degree oven for 10-15 minutes. Roasted this way they are quite good also.

In case anyone is wondering about washing the salt off and then adding salt, it's not the salt you add to your food at the table that gets you, it's the salt added during the canning process. There is much more added during the canning process than what most people would add at the table. At least that is what my doctor says. . . I have high blood pressure and meniere's disease so I have to watch my sodium intake.
