While vacationing this summer at the beautiful Niagra Falls, I realized how much my weight was hindering my ability to "keep up" with the rest of my family. Upon returning home to Mississippi, where the heat and humidity would make anyone want to vegitate inside to the wonderful air conditioning, I knew that I must do something. I tried Adkins, but am a diabetic so I had low sugar problems. My daughter entered into this equation with the anouncement that she wanted to join Weight Watchers and we did. I have a long way to go to get to my real goal of 160, but at least I have started realisticly in shooting for 200 first, that will be 48 pounds less. With the encouragement of my family and friends, I can see it happening!

need a buddy
Well, I know that I am a "heavy weight" compared to y'all, but one suggestion I have is to switch to the CORE plan. You will find that you can eat more different kinds of food legally and have 35 points to use that are for special treats like the 100 calorie packs and bread and such. This week I have switched to Flex and I cannot wait to go back to CORE next week. Try it, it might be just what you and your body needs.

Help!
Weight Watchers is there to help. By going to the meetings, you meet others, like you, fighting to find the skinny person they left behind or find that person for the first time. Go to the meeting, I think you will really be surprised. You will also find encouragement. Fatsecret is super too, so don't forget to let us all help you as well.

Motivated
I like CORE too. It fits well with my lifestyle. I love fruits and veggies and the fact that they are free is wonderful. Now, instead of a bag of chips, I munch on carrots or pretzle sticks (for 2 of my flex points). I do eat an occasional whole wheat toast. Last week I made poached eggs and put it inside the toast. What a treat! Have a successful week!

Newbie
I told everyone at my last WW meeting about this site last week. I really do like it and hope you will too. We are all in the same boat, however some of us, because of our weight, really float well! I am personally hoping to eventually be able to swim under water again. I pop up like a bobbin on a line. You will do great on your diet cause there is a great support group here!

Core programme
The Core Plan is all that I have been doing since starting WW 8 weeks ago. The key is to find recipes that tickle your taste buds. Drink all of your daily water, eat lots of fruits and veggies. I found this recipe in a blog on WW posted by Maryann and it is truly delicious. My whole family enjoys it. It is easy to make and add a salad and you have used only 3 of your 35 weekly points. Double the recipe and you will have wonderful leftovers to have another day, believe it or not, it taste better after the ingredients have married.




Eggplant Parmigiana

We slimmed down this fattening favorite. Baking the eggplant gives the dish a crispy texture without the fat that comes from frying.

Ingredients

* 1 sprays cooking spray
* 1/3 cup seasoned bread crumbs, Italian-style
* 1 Tbsp grated Parmesan cheese
* 1 tsp Italian seasoning
* 1/4 tsp garlic powder
* 1 medium raw eggplant
* 2 large egg white(s), lightly beaten
* 1 1/2 cup canned tomato sauce
* 1/2 cup part-skim mozzarella cheese, shredded

Instructions

* Preheat oven to 350°F. Coat a 9 X 13-inch baking dish with cooking spray; set aside.

* Combine bread crumbs, Parmesan cheese, Italian seasoning and garlic powder in a medium-size bowl; set aside. Remove skin from eggplant and trim off ends; slice eggplant into 1/2-inch-thick slices.

* Dip eggplant first into egg whites and then into bread crumb mixture. Bake eggplant on a nonstick cookie sheet until lightly browned, about 20 to 25 minutes, flipping once.

* Place a layer of eggplant on bottom of prepared baking dish, then add 1/3 of tomato sauce and 1/3 of mozzarella cheese. Repeat with 2 more layers in same order. Bake until cheese is melted and sauce is bubbling, about 10 minutes more. Slice into 4 pieces and serve.
