Today is my first day or my "diet" I guess. I started Curves this morning. Where I had a blast, honestly. I'm not one of those go to the gym types. My boss got a company discount and got all the girls in the office signed up. I really liked it. I would recommend it to any one. The down fall is that it's a little expensive to start.

Nutrition wise I would like to do the Zone Diet. I read that it is suppose to get your hormones back in order and level. I went on the Depo shot, only got it twice and it has completely wrecked my body for the last year and three months. I don’t care how nice the positive things are about the depo but I would never recommend someone, not even my worst enemy to get the depo. I gained 69 lbs in 6 months. NO LIE. Now I'm trying to get my body back.

My reasons for wanting to start this AND STICK TO IT is #1 When I get married to my boyfriend I want to look the way I did when I met him. We like to joke that we got "comfortable." A nice little white lie I guess. The #2 reason is I want to get pregnant, but I want to be healthy before I ever get pregnant. Which ties into my third reason. The #3 reason is child birth. I have no kids, I'm not pregnant but I want a natural child birth at home or in a birthing center. I am mortified of ending up like my mom with 2 c-sections.

Serves- 4 - 4 block
To keep the shrimp from spinning when flipped, thread them on 2 parallel skewers instead of one.

Ingredients:

½ cup reduced fat sour cream
3 tablespoons lite mayo
3 tablespoons milk
½ teaspoon ground cumin
1 ½ pounds large shrimp, peeled
olive oil spray
2 large garlic cloves, minced
4 limes, cut into quarters
½ teaspoon kosher salt
4 low carb flatbread or low carb burrito wrap
2 to 3 cups finely shredded green cabbage
Bottled green tomatillo salsa

Instructions:

Whisk together the sour cream, mayonnaise, milk, and cumin. Set aside. Skewer the shrimp. (If using wood skewers, soak them in water for 10 minutes beforehand.) Place skewered shrimp on a sheet pan, spray w/ olive oil and sprinkle with garlic. Preheat a gas grill to high; adjust to medium after 15 minutes. (If cooking over charcoal, allow the coals to burn until they are covered with gray ash.) Place shrimp on the grill with the limes. Cook about 4 minutes on each side or until the shrimp are opaque and the limes are browned. Remove from grill. Lightly salt the shrimp. Grill flatbread for 30 seconds on each side. To serve, pull the shrimp off the skewers and divide them evenly among the tortillas. Top with the cabbage, sour cream sauce, tomatillo salsa, and a spritz of grilled lime.

Rainy-Day Method: Broil the shrimp and limes about 4 inches from the heat using the cooking times above. Wrap the tortillas in foil and heat in a 350° F oven for 15 minutes, or wrap them in a napkin and microwave for 3 minutes.

Chickpeas Mexicali

Serves: 4 - 3block (to be served w/ Shrimp Burrito)

Ingredients:

1 Tablespoon olive oil
1 chipotle chili in adobo sauce - minced
1 jalapeno chili - minced/seeds removed
1 cup red onion - minced
1 garlic clove - minced
1 ½ cups tomato - chopped
Juice of one lime
3 Tablespoons fresh cilantro - chopped
3 cups chickpeas - canned/drained
Freshly ground black pepper and salt- to taste

Instructions:

In a large bowl add in olive oil, chipotle, jalapeno, red onion and garlic. Whisk together. Add in tomato, lime juice, cilantro, and chicpeas. Toss gently to mix. Correct seasonings. Cover and refrigerate for at least 2 hours. Divide into 4 equal portions. Serve with Shrimp Burritos.
