After a few years of sedentary lifestyle I have kept gaining weight. I have always been chubby since teenage years but in the last few years I have become obese. In the past I have followed with temporary success several diets but later managed to regain the weight quite soon after I stopped.

Now after taking the time to study more the main nutritional science theories I am absolutely convinced that almost all diets on the market are very bad for the health and most of all make you fatter because they push you to get an unbalanced nutrition profile that is impossible to maintain long term.

The only approach that can be sustainable is a balanced one that takes into account one's preferences and idiosyncrasies to design a balanced profile within a lifestyle change approach. The only thing that matters in terms of fat loss is to create and maintain a calorie deficit and that is way easier to accomplish long term with a balanced diet that contain foods that we love and need, rather than with fad diets such as Atkins, Scarsdale and the likes of these.

I dislike the idea of food as magic potions that for some strange reason produces different results depending on the nutrient combinations and intake timing. There is absolutely no scientific evidence for this urban myths and I thinks that they are dangerous and ineffective.

Gaining weight again
you can eat even 0 grams of carbs and gain weight if you eat too many calories with the rest anyway. First short term weigh fluctuations can be due to different reasons including water, muscle soreness or some temporary issues.
If you are following a low carb diet it is only normal that as soon as you eat again some carbs your glycogen reserves get replenished. A better way to assess your progress is to monitor your fat percentage rather than just the weight.

Resetting Metabolism
provided that your RMR is right (that is you input the right data regarding your activity level and personal stat) there is no way that you will not loose fat by creating a deficit of over 1000 kcal per day. With that type of deficit would be impossible not too loose fat and weight. The advice to increase the intake is sound though not that much for this so called metabolism reset that is one of the hundreds myths that surround dieters, but because it is important to get used to habits that you can sustain for the long run and crash diets clearly are not.
